Storage
Chocolate is sensitive to temperature and humidity. Store it in a cool, dry place away from sunlight, ideally between 15ā20°C (59ā68°F). Avoid drastic temperature changes to prevent āblooming,ā which may affect texture and appearance but is safe to eat. When travelling, keep chocolate in a cooler or thermal container with ice packs sealed in a plastic bag. Never leave chocolate in a parked car, even on cool days. In hot climates, refrigerate chocolate by double-wrapping it in an airtight bag and placing it in the warmest part of the fridge. Allow refrigerated chocolate to reach room temperature before eating to maintain flavour and texture. Keep chocolate away from strong odours, as cocoa butter absorbs scents easily.
